Summer is here & with the long days, comes another treat to savor; our annual release of Peach Rings, a very special alternative process from Colombia.
For this lot, ripe coffee cherries were handpicked and sorted, before being floated to remove low density beans.
From here, the coffee undergoes a 72 hour anaerobic fermentation process alongside peaches & wine yeast.
As the coffee ferments, intense peach flavors are transferred to the already fruity beans, resulting in a brew that is deeply sweet & peachy.
